"Rich Chocolate Pie"

Recipe for a Rich and delicious chocolate pie recipe with a store bought crust.

This is all I had left to photograph this delicious rich chocolate pie, is this one little tiny piece of pie left. My family ate it all up before I had time to photograph it. This chocolate pie is very rich and filling, and very easy to make!

Rich Chocolate Pie

4 ounces unsweetened baking chocolate (I used Hershey's...yummy! - Being that I live in Pennsylvania, 30 miles from Hershey, PA,  I think it appropriate that I use the best chocolate around, Hershey's! But, my family also loves Ghirardelli's chocolate too!)
1 cup of salted butter softened
1-1/2 cups of sugar

4 eggs

1 teaspoon vanilla extract

1 already baked pie shell (I used a shortbread pie shell that I bought at the market. This chocolate pie is so rich that you do not want a really sweet pie crust so a shortbread pie crust or a regular pie crust works best.)

Melt the 4 ounces of baking chocolate in a microwave bowl until it has the consistency to stir easily. Do not burn your chocolate, put in microwave for 30 seconds, then stir, repeat until ready. Set aside to cool.

In a large bowl beat butter and sugar until fluffy. Drizzle cooled chocolate over butter and sugar mixture. Add vanilla and beat until combined.

Take your time for this next step so that everything is beat together nicely. Add in the eggs one at a time about ever three minutes. Once the chocolate pie mix is well combined and mixed, pour it into the baked pie shell.

Refrigerate for at least 2 hours. Enjoy this delicious rich chocolate pie, and top off with whip cream if you want.
