My Family's Favorite Dinner Recipes

Honestly, most of the time, I am a lazy daisy girl when it comes to making dinners.  About 3 nights a week I cook a "big" dinner.  The rest of the week it's little dinners, eat out, or in a lot of cases, I grab a homemade dinner from the freezer that I made in the past which is a big help on those nights I teach sewing classes and am too tired to cook.

How to make Quick & Easy Dinners for the Busy Family who still wants to have a homemade dinner together.

On an occasional Saturday, my daughters and I will make about 4 each of 4 different meals, (20 meals in all) and freeze them for nights when I am teaching sewing, or if I am running the kids to their activities, and there is no time  to cook. This gives my family a great homemade meal in just minutes.  I usually add a salad or a veggie and sometimes a bread of some sort.  For dessert I take homemade cupcakes out of the freezer (We will also make about 6 -8 dozen cupcakes too.) Each dinner is put in an aluminum foil pan and covered tightly with foil.  With a permanent thick black marker we write what the meal is, the date, and the cooking instructions. The foil pans can be purchased at your local Wal-mart or Kmart and are great for clean up, just trash them when dinner is done. Quick and Easy!

To help preparations of cooking dinner go fast and easy, I always keep fresh garlic, onions, and shallots in a basket on my kitchen counter.  They are kept at room temperature and will stay fresh for 2 weeks.  Displaying the onions, shallots, and garlic in a basket can be both handy and decorative.

I like to use fresh herbs in all of my cooking.  I keep fresh parsley, rosemary, and thyme on hand at all times. They keep best if, after you return from the grocery store, wash them, wrap them in a moist paper towel and put them in a plastic bag in the fridge. They should stay good for 2 weeks.
