Recipe for Pink Lemonade Layer Cake

Recipe for pink lemonade layer cake that is tart and sweet at the same time!

"mmmmmm", this delicious pink lemonade cake is sweet and tart all at the same time! The first time my mom made this, it was hit, now I make it for my family. I like to serve it near Valentine's day because of the the pretty pink color, but it's also a great summer dessert.

 Pink Lemonade Layer Cake Recipe

cake ingredients:

1 (18 1/4 ounce) box white cake mix

1 teaspoon finely grated lemon zest

2 teaspoons vanilla extract

3 tablespoons sweetened pink lemonade drink powder (I use Country Time)


icing ingredients:

1 pound confectioners' sugar

1 1/2 stick butter, softened

5 tablespoons of sweetened pink lemonade drink powder mixed with 1/3 cup water

1 teaspoon vanilla

1 teaspoon finely grated lemon zest



Preheat the oven to 350 degrees F. Spray 2 (8-inch) round or square cake pans and line the bottoms with parchment paper or wax paper.

Prepare the cake batter according to the package directions on the box and then mix in 1 teaspoon lemon zest, 2 teaspoons vanilla, and 3 tablespoons of pink lemonade drink powder. Bake until golden and a toothpick inserted into the center of the cake comes out clean, about 30-35 minutes. Let cakes cool. Carefully turn one cake onto a decorative dish.

While the cakes are cooling prepare the frosting by beating together the confectioners' sugar and butter until fluffy. Beat in remaining frosting ingredients until combined. Frost the cake and enjoy.
